Slow-Cooker Pineapple Pork Roast

Tender pork roast slow cooked with sweet pineapple

Total Time 4 hours 30 minutes

Ingredients

  • 3 lb. pork butt roast
  • 1 20 oz. can chunked pineapple with juice
  • 2 tsp. minced garlic
  • 2 tbsp. minced onion
  • 1/4 cup honey
  • 2 tbsp. rice vinegar
  • 1/4 cup soy sauce
  • 1/4 tsp. pepper
  • 1/2 tsp. ginger
  • 2 tbsp. cornstarch
  • 1/4 cup cold water

Instructions

  • Cut the pork roast into large 2-inch chunks. Place them in your slow cooker, and empty contents of canned pineapple over the top of the pork. (including the juice)
    Mix garlic, onion, honey, vinegar, soy sauce, pepper, and ginger together and whisk till well combined. Pour over the pork and pineapple. Cook on low for 4 hours.
    After 4 hours, mix the cornstarch and cold water together until it is smooth and there are no lumps. Add to the slow cooker, and mix in well. Turn up to high for another 20 minutes, and allow the sauce to thicken just a bit. 
    Serve over rice.
