This week I have a slow-cooker recipe for you: my Slow-Cooker Pineapple Pork Roast! If you’re anything like me, now that the days are getting longer and warmer, you just really want to be outside as much as possible.
Slow-Cooker meals are so perfect because you can literally throw your ingredients into your crock pot, and basically forget about it until dinnertime. Instead of laboring away all afternoon inside, you can spend that time working on outside projects, or sitting in a chair in your backyard or on your patio, doing whatever you please. Sounds pretty nice, right?!
I’ve always liked a good, tender pork roast. This recipe uses a small butt roast, so it doesn’t require a massive chunk of meat. The roasts tend to be really marbled with fat, which makes your roast really juicy. But that can also gross some people out. If you want to trim some of the fat off, you definitely can – I trim some off of mine.
Pineapple is so good with pork. It’s sweet, complimentary, and pretty. The sauce is a perfect blend of soy sauce, rice vinegar, honey, garlic, ginger, pepper, and onion.

Slow-Cooker Pineapple Pork Roast
Ingredients
- 3 lb. pork butt roast
- 1 20 oz. can chunked pineapple with juice
- 2 tsp. minced garlic
- 2 tbsp. minced onion
- 1/4 cup honey
- 2 tbsp. rice vinegar
- 1/4 cup soy sauce
- 1/4 tsp. pepper
- 1/2 tsp. ginger
- 2 tbsp. cornstarch
- 1/4 cup cold water
Instructions
- Cut the pork roast into large 2-inch chunks. Place them in your slow cooker, and empty contents of canned pineapple over the top of the pork. (including the juice)Mix garlic, onion, honey, vinegar, soy sauce, pepper, and ginger together and whisk till well combined. Pour over the pork and pineapple. Cook on low for 4 hours.After 4 hours, mix the cornstarch and cold water together until it is smooth and there are no lumps. Add to the slow cooker, and mix in well. Turn up to high for another 20 minutes, and allow the sauce to thicken just a bit. Serve over rice.
