Honey Glazed Salmon with Mango Salsa

Ingredients

  • 1 piece fresh salmon, cut in half to make two long narrow pieces (total weight of piece of fish between 0.80 and 1 lb.)
  • 2 tbsp. honey
  • 1 tbsp. orange juice
  • salt and pepper, to taste

Mango Salsa

  • 1/2 cup vine ripe or Campari tomatoes, diced
  • 1/4 cup fresh mango, diced
  • 1 tbsp. red onion, finely diced
  • 1 1/2 tbsp. fresh cilantro, chopped
  • 1/4 tsp. salt

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
    Place salmon pieces in a greased baking dish. (line with greased foil for easy cleanup.)
    Whisk together honey and orange juice and cover salmon pieces with the mixture. Season with salt and pepper as desired.
    Bake uncovered for 20 minutes. Remove from oven, and spoon the thickened honey glaze mixture that has pooled in the bottom of the pan, over the top of the salmon. 
    Mix together all salsa ingredients. Top salmon with salsa before serving.
