Sweet & Spicy Kielbasa and Rice

Ingredients

  • 14 oz. kielbasa sliced into about 1 in. slices
  • 1 tbsp. oil olive
  • 1/3 cup onion, diced
  • 1 cup fresh or frozen pineapple, chopped into small slivers
  • 1 cup rice jasmine
  • 1/2 tsp. black pepper
  • 1 tsp. salt
  • 1/2 tsp. basil
  • 1 1/2 tsp. chili powder this can be backed off to 1 tsp. for just a little less spice.
  • 2 tbsp. brown sugar
  • 1/2 cup crushed tomatoes
  • 1 tbsp. butter
  • 1 cup chicken or turkey broth
  • 1 cup water

Instructions

  • In a large skillet, heat 1 tbsp. oil on medium heat.
    Add kielbasa, onion, and pineapple. Cook about 5 minutes, allowing the kielbasa to brown on both sides. Remove from heat.
    Add rice, pepper, salt, basil, chili powder, brown sugar, and tomatoes. Stir really well until spices are completely mixed in.
    Add butter, broth, and water. Return to heat, turn to high, and cover with either a lid or if you don't have a lid that fits your skillet, cover with a large piece of foil.
    As soon as it comes to a boil, remove covering and stir to distribute the melted butter, turn to low, and cover again. 
    Cook on low for about 15-20 minutes, or until the rice has absorbed the liquid and is done. 
    Garnish with parsley or cilantro for extra flavor, and serve.
