I don’t know about you, but every year during the late winter – early spring, I start craving all the summer foods. Brightly colored foods, fresh, flavorful ingredients, and all the summer fruits and vegetables just sound SO GOOD.
Maybe it’s my body trying to tell me it needs more sunshine and vitamins. Whatever the reason, I will gladly oblige and satisfy all the cravings.
Honey glazed salmon
We eat a ton of salmon around here. I used to end up disappointed with salmon over and over, until I realized that I just wasn’t preparing it correctly. Let me tell you, it is not only possible but incredibly easy to prepare a juicy, oh-so-perfect piece of salmon. Hang tight, because I’m going to show you exactly how.
It’s one of my favorite things to make for several reasons. First, it’s healthy but also insanely satisfying. Second, it’s one of the quickest meats to prepare. It takes such a small amount of time to cook, so it’s perfect for even the busiest nights.
The technique
Pro Tip: For painless cleanup, line your baking sheet with lightly greased foil before baking salmon.
Salmon is best cooked at high temperatures, for just the right amount of time (which isn’t a lot), and no more. Overcooking will dry it out, and you will not get that juicy, flaky, perfect salmon.
Mango Salsa
Ahhh. The fresh mango salsa is like a burst of summer sunshine in your mouth. You can buy whole mango, and once it is soft to the touch, you can peel it and dice it up. Or, you can buy fresh mango that is already peeled and ready to go, and all you have to do is dice it finely.
For the tomatoes, I prefer campari or vine ripe. If you’re making this in the summer, then homegrown tomatoes would be your obvious and best tasting option if they are available to you.
Then, this salsa just gets red onion, salt, and fresh cilantro added to it, and that’s it! The salt REALLY makes the flavor in this salsa come alive. So, whatever you do, don’t leave that part out.
Bonus idea: this mango salsa is a fantastic addition to shrimp or grilled chicken as well!

Honey Glazed Salmon with Mango Salsa
Ingredients
- 1 piece fresh salmon, cut in half to make two long narrow pieces (total weight of piece of fish between 0.80 and 1 lb.)
- 2 tbsp. honey
- 1 tbsp. orange juice
- salt and pepper, to taste
Mango Salsa
- 1/2 cup vine ripe or Campari tomatoes, diced
- 1/4 cup fresh mango, diced
- 1 tbsp. red onion, finely diced
- 1 1/2 tbsp. fresh cilantro, chopped
- 1/4 tsp. salt
Instructions
- Preheat oven to 400 degrees Fahrenheit.Place salmon pieces in a greased baking dish. (line with greased foil for easy cleanup.)Whisk together honey and orange juice and cover salmon pieces with the mixture. Season with salt and pepper as desired.Bake uncovered for 20 minutes. Remove from oven, and spoon the thickened honey glaze mixture that has pooled in the bottom of the pan, over the top of the salmon. Mix together all salsa ingredients. Top salmon with salsa before serving.
