Mmmm. SO GOOD. You’ll want to add this to your list of easy dinners!
I am particularly fond of this one-pan dinner. Number one, because of the amount of time and work it takes to make it (not a lot). And if you’ve been around awhile, you know quick and easy is my jam!
And number two, because of how incredibly yummy it is. I mean, so so good. It’s a bit hard to stop eating actually.
What makes this one of the most delicious dinners?
It’s a little sweet thanks to the pineapple and a little bit of brown sugar (you could also swap this out for maple syrup or honey for a healthier option), and it also has some spice thanks to the chili powder. Adjust this as you want to, especially if you have picky eaters that don’t want to sense much spice at all. I’ve found that chili powder heat can vary a lot just depending on the brand. I’ve had some that are just smokey and others that have actual heat.
In my opinion, kielbasa and rice are just perfect together. I recommend using jasmine rice since it has such a high flavor profile. I love the big bags of Jasmine rice from Aldi. Tastes REAL good and is one of the best prices I’ve seen anywhere. For the kielbasa, I used a classic one with beef and pork. Then you add the sweet and spicy factors, along with some onion, tomato, seasonings (hey hey basil, what a surprise you showed up in this dish!) butter, and broth, and you just will not fail.

Sweet & Spicy Kielbasa and Rice
Ingredients
- 14 oz. kielbasa sliced into about 1 in. slices
- 1 tbsp. oil olive
- 1/3 cup onion, diced
- 1 cup fresh or frozen pineapple, chopped into small slivers
- 1 cup rice jasmine
- 1/2 tsp. black pepper
- 1 tsp. salt
- 1/2 tsp. basil
- 1 1/2 tsp. chili powder this can be backed off to 1 tsp. for just a little less spice.
- 2 tbsp. brown sugar
- 1/2 cup crushed tomatoes
- 1 tbsp. butter
- 1 cup chicken or turkey broth
- 1 cup water
Instructions
- In a large skillet, heat 1 tbsp. oil on medium heat.Add kielbasa, onion, and pineapple. Cook about 5 minutes, allowing the kielbasa to brown on both sides. Remove from heat.Add rice, pepper, salt, basil, chili powder, brown sugar, and tomatoes. Stir really well until spices are completely mixed in.Add butter, broth, and water. Return to heat, turn to high, and cover with either a lid or if you don’t have a lid that fits your skillet, cover with a large piece of foil.As soon as it comes to a boil, remove covering and stir to distribute the melted butter, turn to low, and cover again. Cook on low for about 15-20 minutes, or until the rice has absorbed the liquid and is done. Garnish with parsley or cilantro for extra flavor, and serve.
