Fish tacos with mango slaw and lime sour cream

Ingredients

  • 2 fillets Tilapia, fresh
  • 2 cups Cabbage, shredded
  • 1/3 cup Mango, diced
  • 1/2 cup Sour Cream
  • Juice from 1 lime
  • 1 Avocado, sliced
  • 1/4 tsp. Lime zest
  • 1/4 tsp. Paprika
  • 1/4 tsp. Cumin
  • 1/4 tsp. Onion Powder
  • 1/4 tsp. Garlic Powder
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 2 Tbsp. Oil
  • 2 Tbsp. Vinegar
  • Corn or Flour Tortillas (small)

Instructions

  • Preheat oven to 400.
    Mix paprika, cumin, onion, and garlic powder together and rub onto fish. Place in a lightly greased baking dish. Bake for about 15 minutes or until fish is done through. (about 10 minutes for each inch of thickness)
    Combine cabbage, mango, oil, vinegar, salt and pepper. Mix together well, and set aside.
    Combine lime zest, lime juice, and sour cream, and set aside.
    Heat tortillas in a lightly greased skillet, or in the oven wrapped in foil, until warm.
    Layer fish, slaw, avocado, and lime sour cream in each tortilla.
