Salsa Chicken Spaghetti

Ingredients

  • 1 lb. spaghetti noodles, cooked according to package instructions
  • 1 tbsp. butter
  • 1 boneless, skinless chicken breast, cut into bite sized pieces
  • 2 tbsp. oil
  • 2 medium vine ripe tomatoes, diced
  • 1/4 tsp. garlic powder
  • 1 tsp. cumin
  • 1/2 tsp. chili powder
  • 1 cup mild salsa
  • 1 cup cheddar, shredded
  • 1 tsp. salt

Instructions

  • Cook the spaghetti noodles according to package instructions, while you start the chicken. When the noodles are finished cooking, drain, and return to pot. Add 1 tbsp. butter, stir to mix in, and set aside, covered. (leave off heat)
    For the chicken:
    Heat 2 tbsp. oil in a large skillet. Add the chicken and cook for 5 minutes.
    Add the vine ripe tomatoes and cook for 5 additional minutes.
    Add seasonings and salsa. Stir well to mix in. Simmer for 5 more minutes.
    Add mixture to the pot with the spaghetti, and add cheese and salt. Mix in well. Serve with extra cheese if desired.
